Excellent topic. My contribution would usually be The Hunger Games, because obviously, but I feel like that ones been picked to death.

And since Six of Crows and ATLA’s amazing worlds have been mentioned already, I’ll go with An Ember in the Ashes. The world Sabaa Tahir weaves is complex and brutal, and from the first page of the first book I knew it would only get better the more we learned. She drew inspiration from the middle east as well as the Romans but I never felt like it was a history lesson. The way her characters interacted with their world made every bit of information personal and real.

Also, any Rick Riordan book is a good example of world building without needing to create an entire world. Which is something I struggle with, finding the balance between fact and fiction.
