Back on the original mention of dwarves and food (etc.), obviously one factor would be their environment. Which, in either a jungle or desert setting, would be very different to what people are used to reading. That’s why people who write like this have to make the setting comfortable for the audience. If they feel comfortable and really enjoy the setting, they may be more inclined to agree and appreciate the dwarves’ way of life.

Another note. I hate to burst the bubble on the desert dwarves (meaning that it isn’t the first time somebody has come up with that [not like that was unobvious before, at all]), but I read this one book – not a very recommendable series; it was too sparkly and too unrealistic. There were some good parts, though – where the author brought in desert dwarves. Now she did this in a pretty good way; meaning the introduction of them. But their role in the story and their character was too obscure and holed. She should have built them up more. Anyway, they appeared in dark, underground rooms with no apparent way of life.

So it’s a go on the desert dwarves. But the thing would be this: what would they eat? Deserts are barren and not many large meat-animals live there. Maybe traders come and that’s how they get their food. I dunno….
